What’s Cookin’? With Brian Isbell Garcia

Not only is Brian Isbell Garcia a top notch horse trainer, he makes a mean cherry pie! In today’s edition of What’s Cookin’, Brian shows us how to make his Momma’s Cherry Pie.

Ingredients:

• 3 cups pitted sour cherries
• 1 1/4 cup white sugar
• 10 teaspoons cornstarch
• 1 tablespoon butter
• 1/4 teaspoon almond extract
• Pre-made pie crust
• 1 egg
• 3 tablespoons of water

Instructions:

1. Roll out one disk of dough into an 11 inch circle. Line a 9 inch pie pan with the pastry. Refrigerate until needed. Roll out the dough that will be used for the top crust lattice, transfer to a plate or baking sheet, and refrigerate.
2. Preheat the oven to 375 degrees. Place a baking tray in the oven to preheat.
3. Place the cherries, sugar, and cornstarch in a medium-sized, non-aluminum saucepan. Stir and allow the mixture to stand for 10 minutes, or until the sugar draws out the cherries’ juices. Bring to a boil over medium heat, stirring constantly. Lower the heat and simmer for one minute or until the juices thicken and become translucent.
4. Remove the pan from the heat and stir in the butter and almond extract.
5. Allow the filling to cool.
6. Pour the filling into the pie shell. Cover with a top crust lattice, crimp the edges to seal, and cut vents for steam.
7. Beat together 1 egg and 3 tablespoons of water to make an egg wash to brush on the top crust.
8. Bake in a preheated 375 oven on a baking tray for 45-55 minutes. Cool for 15 minutes.
